Overview
A Clean Exhaust System Is a Safe Exhaust System
Every time you cook, grease-laden vapor travels up your hood, through the ductwork, and out the exhaust fan — and some of it stays behind. Over time those deposits become fuel. Grease fires in exhaust ducts spread fast and are difficult to reach and extinguish.
A&A cleans the entire exhaust system, not just the parts you can see: the hood, plenum, filters, vertical and horizontal ductwork, and the rooftop exhaust fan. We clean to bare metal, protect your kitchen while we work, and leave the space clean for your morning crew.
Every cleaning comes with a service sticker on the hood and a report with before-and-after photos — exactly what fire marshals and insurance providers want to see.

Why It Matters
How Often Does Your Kitchen Need Hood Cleaning?
NFPA 96 sets the minimum cleaning frequency based on the type and volume of cooking. Local fire marshals use it as their benchmark, and insurance carriers often require it.
| Type of cooking | Cleaning frequency |
|---|---|
| Solid-fuel cooking (wood or charcoal) | Monthly |
| High-volume cooking — 24-hour operations, charbroiling, or wok cooking | Quarterly |
| Moderate-volume cooking — most full-service restaurants | Every six months |
| Low-volume cooking — churches, day camps, seasonal businesses, senior centers | Annually |

Questions & Answers
Exhaust Hood Cleaning FAQ
How long does a hood cleaning take?
Most single-hood restaurant systems take three to five hours. Larger or heavily soiled systems can take longer. We’ll give you a time estimate when we quote.
Do we have to close the restaurant?
No. We schedule cleanings after closing or overnight so you never lose a service.
Do you clean the ductwork and roof fan too?
Yes. We clean the entire system — hood, plenum, filters, ducts, and the rooftop exhaust fan. Cleaning only the visible hood leaves the most dangerous grease behind.
Will we get proof of cleaning for the fire marshal?
Yes. We place a dated service sticker on the hood and send a report with before-and-after photos.
What if our ductwork doesn’t have enough access panels?
We’ll note any areas we can’t reach and can recommend and install access panels so the whole system can be cleaned properly.
